Sausage casserole.

I'm going to make a venison sausage casserole. I don't have a recipe and I'd appreciate any suggestions re what to put in it.

Also would red onions,brown onions or shallots work best?

Ooooh om nom nom.

My favourite saus cass is onions, garlic, a tin of toms, a tin of beans and a glass of red wine. All simmered for at least half an hour. Sounds grim but tastes really rich and lovely. I put toulouse sausages in that sometimes.

Red onion, garlic clove, sweet potato, cannelini beans, stock and a good dollop of whole grain mustard. Brown the sausages off first and cook the casserole for at least an hour.
