Making a chilli now, what to do with it overnight?

It is bubbling away at the moment, should be done in about half an hour - would you leave it out in the kitchen overnight with the lid almost fully on?
Don't see that I have a lot of choice

No, I would put it in the fridge. Let it cool for 15 minutes and then into the fridge.
Not ideal, but better than leaving it out overnight.

I would just stick a lid on the pan properly, it will be fine

Yes, I would leave it to cool over night. I would cover with the lid almost fully on or a tea towel.

I do this all the time. Make curry/chilli and leave it overnoght with the lid on. Flobulation is the word we use in our house. It ALWAYS tastes better the next day. Noone died yet....

mimsy, i really don't think it will have cooled much at all in 15mins, will take hours
and i'll be up at 5
would it change things radically if i said we had a 'drinks fridge' i could empty? would that be safer?

Just leave it in the pan with the lid on overnight - I guarantee it will NOT kill you or anyone else in the house.

Heat it up properly tomorrow and it will be fine.
