too many eggs!

I have 17 eggs that need to be used by 7th June. What can I do with them? I am having 2 boiled on toast no - so what do i do with the other 15?
I have tomorrow before they are out of date.

Any ideas for a simple dish (not omelette) for eggs? Lots of eggs!

Meringues are a good idea, and i will look up the River Cafe recipe for next week when I will be having friends over for afternoon tea (well Pimms in the garden!).

Any more ideas?

Just to make things awkward my dd hates eggs - really hates them not just a fuss pot because she will eat anything else! So cannot be obviously eggy like frittata.

Make up lots of pancake batter to freeze, which can be used for Yorkshire puds, toad-in-the-hole, etc. as well.

But totally agree that they'll last a lot longer than the date, IME.

Anglesey eggs!

Leeks fried til soft in butter and halved hard boiled eggs.

Cover in a bechamel or cheese type sauce.

Top with mashed potato and grated cheese.

Bake as you would a shepherd's pie.

Filling and yum.

My mum found this recipe in a victorian book in a holiday cottage in Wales.

Just split it up into useful sizes (not all in one, unless you'll use it all at once, obviously) & freeze in bags or Tupperware, etc. Defrost it in the microwave - it may be slightly thinner in consistency, but you can just add a little more flour & it's fine
