I haven't made fudge since childhood and want to start making it again.

What will I need and can you point me in the direction of some good recipes please?

Nigella's chocolate fudge is very easy here I make it plain or with raisins sometimes. I have never attempted to make proper fudge, I am more of a melter and heater upperer than a chef!

Sophie Dahl's peanut butter fudge is amazing [drool] you only need to boil the sugar butter mix for 3 minutes so a lot less 'cooking' needed than with proper fudge recipes I think. I've also made a chocolate version of this using nutella instead of peanut butter which was also really yummy altho slightly more crumbly. Both produce old-fashioned style slightly crumbly fudge rather than chewy type, yum...I want to make some now!

Thank you, they akk look fab. Actually, my bf said that someone at work had brought in Sophie Dahl's Peanut Butter Fudge and it had nearly caused a riot.

Do I need a Sugar Thermometer?

I don't have a sugar thermometer & made the sophie dahl fudge fine...you just need to watch when it boils then time the 2-3 mins...think because you add icing sugar at the end it kind of helps it turn into fudge regardless...that's my theory as to how I (not the best cook!) manage to make it turn out delicious anyway!

And I know, can't actually believe that she eats the fudge herself, but glad of the recipe anyway

Thanks, think I will give the Sophie Dahl recipe a try.

Saw a nice one for chocolate & pistashio which I may try too.
