How long do I cook my beef fillet log for?

It's 750g and we want it rare! Also - do I need to cover it in the oven or anything?

When I'm cooking a fillet like that I just blast it VERY hot for about 20-25 mins (uncovered) and then let it rest for at least half an hour. (We like our meat very rare.) Sometimes I start it in a frying pan to make sure you get the delicious dark outside without cooking any of the rest of it. The resting is essential as it turns the inside from completely uncooked (i.e. how I like my steak!) to juicy pink-shading-to-very-red-in-the-middle goodness.

I don't see why you shouldn't put a rub on it - I always put salt and pepper on mine. Bear in mind that fillet has a relatively delicate flavour though so you don't want to overwhelm it.

Sorry should have said: rest it under foil to keep the warmth in. It won't be hot so much as lukewarm when you eat it, but it will be delicious! (and you can make sure everything else is hot, if you are fussy about that)
