these black forest cupcakes are nice, it could easily be converted into one big cake if you wished

OK.
One part morello cherry jam.
2 parts SR flour.
2 parts sugar.
2 oart veg/sunflower oil.
1 part cocoa.
3 eggs.

Melt the jam in a saucepan. Leave it to cool a bit, mix everything.
Fool-proof, every cake I make is a variation on this recipe (I usually use ygurt instead of jam! Cherry yog for chocolate cake is lovely.)

Good luck!

oh yes hang on [rummages]

125g butter or marg
100g best plain choc
300g jam (or marmalade for a choc orange cake)
150g sugar
2 large eggs
150g SR

Melt butter, add choc, stir till melted.
Add jam, sugar and eggs and stir.
Beat in flour bit by bit
20cm buttered and floured tin
Nigella says 180C 50min, I found it needed 120C 1h20min
done when knife comes out clean
cool in tin 10min then turn out

improves with keeping for a few days so long as the tin is properly airtight.

MrsB - would you do this as a loaf?

Nigellas cherry chocolate cupcakes are dead easy and taste fab

MrsBadger · 01/06/2010 21:11

could do but it'd need cooking even longer and cooler
I did 20cm (8")diameter

(is the same recipe as the one CMOT linked to)

geordieminx · 01/06/2010 21:13

Did you ice it?

MrsBadger · 01/06/2010 21:15

oh no, I make it for work / lunchboxes, not for special occasions

It's probably too late (and it isn't chocolate!) but this is delicious and looks good.
