Catering for a Christening

Hi, I wonder if anyone has any ideas? I'm catering (with a few family members too) for a Christening at the end of June. Its pretty much sorted but I need suggestions/ideas for one more dish.

Doing beef joint, ham joint, chicken drumsticks, chicken dish (hot), plus salads, coleslaw etc. bread. I think I want something else warmish (not chilli, but on those lines). I need to make it in advance and freeze please. There will be about 43 guests.

do you have a veggie main course? something like a roasted veg tart could be nice?

How about a hot vegetarian dish? Ratatouille or a big mushroom quiche or a chickpea tagine?

I'd do one of these:

Lamb or prawn Curry
Beef stifado or
hot chicken wings or spare ribs put in oven and leave to cook

big risotto? mushroom, maybe?
Probably would be a good idea to have a vegetarian dish with that many people, just in case.

I think it should - I know I've bought frozen ones before that have been fine but of course that's slightly different.

Can't see why it wouldn't, tbh - the mushrooms have already changed texture through the cooking, there is no thickening agent apart from the rice starch, rice will freeze fine - should be ok. How long have you got - maybe do a test batch just in case?
