vegetarians coming for lunch tomorrow - HELP!

i admit it, i've no idea what to cook. obviously i don't have much of a culinary range, or enough veggie friends! does anyone have any suggestions? DH says pasta not acceptable - needs to be more special. ditto pizza....what would you serve? doesn't need to be too fancy. (they're coming with toddler+baby.)

Delia does a delicious med veg lasagne. Or is that in the pasta exclusion. Served with crisp green salad and bread. Lovely strawberries for afters with cream?

Do they eat fish? If yes, a nice fish pie with some peas?
On another MNer's recommendation, I madethis tagine the other day and it was delicious, and very easy served with some herby cous cous and pita/hoummous.

garlic courgette omelettes.

I served this to my kids today and they loved it.

finely slice courgette
Crush a clove of garlic
fry in some olive oil
Add whipped up raw eggs
Put lid on
Serve when cooked through (4/5 minutes?)

Ta gine and cous cous is lovely - but I just do it with a couple of fresh tomatoes and spices and stock because tinned tomatoes (as in the recipe that Dairymoo has linked to) are the work of the devil.

Can you make a quiche? Nice with a big pan of roasted garlic new potatoes and a salad.

Or dauphinoisse potatoes with roasted stuffed mushrooms and a salad with a mustardy dressing.

Go to M&S and buy a nice quiche with new potatoes and salad.

Fruit meringues and cream for dessert.

Def just have a fridge lunch - cut up veggies, gorgeous crusty bread, nice cheeses, humous, soup of you fancy etc
