Freezer ideas please

As it's half term next week, I thought I might have a 'freezer day' filling up the freezer with things that will make my life easier, as I work full time.

Can anybody think of anything that would be helpful - either dishes I can cook in full, things I can do part prep of, or even tips like grating portions of cheese into small bags etc.

Need to be veggie.

I was going to start this exact thread.

Except for the veggie bit, but I'm sure I can jut add meat.

All I've got on my list so far is Spag Bol, Chilli, Cottage pie (assume you can use veggie mince to make these?)

Sausage casserole, oxtail stew, any kind of soup, stewed fruit, sorbets(made with crushed fruit and sugar syrup) mashed potatoes,breadcrumbs, cream about to reach sell by,blanched veggies...hmmm, may be back...(with more)

Agh - I don't like veggie mince - but thank you.

Scrab - thank you but I need them to be vegetarian. Stewed fruit is a great idea though.

Only first two not veggie...and could be, but didn't know if you used meat substitute.

Veggie lasagne is brilliant but since we eat vast quantities at a time and only have a small freezer, it may not fit. Could I freeze the lentil sauce and the cheese sauce then assemble after defrosting? I think the lentils would be fine but not sure about cheese sauce.

all the above and any veggie burgers/rissoles/sausages
veggie toad in hole works well too and the onion gravy freezes a treat
i also batch freeze cauli/brocc cheese
would def say that you could batch freeze lentil sauces but i wouldn't imagine that frozen cheese sauce would taste nice unless it was pre-cooked into something

Thank you. I did wonder about the sauce. Is it okay when you freeze cauliflower cheese, or does it separate?

I tend to freeze portions of white sauce, then once it has defrosted I add cheese/ parsley/ nutmeg/ onions etc It always seems to freeze without splitting.

no it's fine,i always batch cook first then defrost and oven re-heat

If I chop a whole load of onions, peppers for eg - do I have to blanch them before freezing?

Any good veggie soup recipes that don't need blending as my blender has just died?

i don't see why you couldn't tbh..tho i guess those freezer books of years ago would beg to differ
i haven't any soup recipes off the top of my head which don't require a blitz sadly,am hoping that someone else will come along and help out here,if i have a brainwave however will report back

Could use potato masher? Bit more effort, but does same job. As long as you mix it all well.
