fool-proof felafel

does anyone have a recipe that works 'every' time?? I'm happy with my flavour combo but mine are so hit and miss. Sometimes they stay together perfectly yet others they are a crumbly ball .

I don't have a recipe as such but if they are crumbly. it could mean that the mixture is too wet...one thing that I found helped a lot with my falafels is to use a falafel shaper:

then poke a slight hole in the middle - this helps it to cook all the way through without having to be over done on the outside

Another thing to use is corn oil rather than veg oil - this can be heated to a higher temperature and I've found cooks falafel much better than veg oil

ah, maybe they were too wet. I think I over pulsed them?

Thanks for the shaper tool link too... cool! I actually used groundnut oil (maybe ) cos it was all we had. I think hubs uses it for chinese cooking for similar reasons?

My DH is Syrian and my MIL (God bless her) when she was alive, used to bring falafel mix over with her and she showed me how to shape it and fry it...she swore by corn oil and said not to use anything else.

The denting in the middle is also the way they cook them in Syria...most Syrian housewives buy the mix now as its such a faff making from scratch and a bit hit and miss
