DP and i have noticed that with (tesco's) organic eggs the yolks are much darker and the taste is much stronger than the free range ones. but what exactly is the difference in terms of animal welfare, if any? the labels are a bit vague about this...

Organic has to do with what the chickens are fed and their welfare; free-range only relates to welfare (so many hours outside every day, but they may have conventional diet (& medication regime)).

I suspect the differences you notice come down to variety of chicken more than the way they are raised.
