I love;

Sweet potato chunks just barbecued with nothing on them other than a little tiny bit of olive oil.

Homemade burgers.
I do half lamb mince half beef mince. Lots of fresh parsley, sea salt and cracked black pepper with an egg to bind.
Yum!
Oh and my home made blue cheese dip.
Half cream cheese, 1/4 blue cheese and 1/4 mayonnaise mashed together.

Also get the large flat mushrooms smother them in garlic butter or if you want to be healthy just put garlic on them and cover in foil and put them on the BBQ until soft they are scrummy

Marking my stop - need tips

mmmm forgot about mushrooms.

I'm doing lemon and garlic chicken as well today.

Chicken pieces or fillets, marinate in juice of two lemons, two tablespoons of honey and two cloves of garlic finel chopped.
Season and throw on the barbecue, drizzle the marinade over every now and then.

itsmeitsmeolord: gasp You don't REALLY drizzle the SAME marinade over the cooking chicken every now and again that you've actually marinaded the RAW chicken in, do you?

kiwibella · 23/05/2010 16:18

banana - slit the skin and stuff with marshmallows and chocolate. Wrap in foil... deelish!!!

Homemade burgers for grown ups.

Steak mince - per 500g use 1 small cup of fresh white breadcrumbs,1 tablespoon wourcestershire sauce, 1 small red onion finely diced, 1 de-seeded red chilli very finely chopped and lots of pepper & salt. Have to be served on big white burger baps (toasted on the bbq) thick slices of beef tomato, soft lettuce leaves and sweet tomato relish.

Had them for lunch. Yum.

Wow - some of these are amazing! I love the blue cheese dip idea, and the sweet potatoes - never thought of doing them on a barbecue. And I like the idea of wrapping things in foil (esp the Camembert) and using pesto as a marinade.

I hate going to BBQs as the veggie options are always rubbish but you've given me some great ideas!

My favourite is veggie kebabs - I make them more interesting by marinading the vegetables, along with chunks of pineapple, halloumi and Cauldron veggie sausages, for a couple of hours beforehand. Then thread on sticks and grill.

Hungry now...

Lamb burgers: mix some lamb mince with any/all of the following - minced green olives, salt and pepper, cracked coriander, oregano. You are going for a vaguely-Greek theme here; for Middle Eastern try coriander and cumin, with harissa if you like them spicy. Shape into patties and refrigerate.

Meanwhile top and tail some young courgettes, and cut lengthways into quarters or eighths. Marinade in olive oil with garlic, rosemary.

BBQ the lot and serve with feta cheese crumbled over the top, and a tomato and red onion salad. (Or warmed flatbreads etc for Middle Eastern version.)

thereistheball · 25/05/2010 19:49

Sorry, meant warmed flatbreads, humous etc.

Butterflied leg of lamb marinated in garlic rosemay and olive oil. Grilled for 20 mins each side.

or whole fillet of salmon wrapped in foil with herbs seasoning and a slug of white or rose wine. 15 minutes skin side down.
