8 inch cake tin with deep sides

I am going to make a duck for my daughter's first birthday cake. I have a picture of a duck to cut round, then ice it. I have an 8 inch cake tin, with deep sides to cut round. What recipe can you suggest?

Do a normal sponge cos it will be easy to handle. Or can put little bit of coco and make a chocolate duck
