i have in my fridge 3 portobelo mushrooms 3 duck eggs and some english blue cheese. I was thinking take the stalk out of the mushrooms crack a duck egg into each and bake? then crumble the cheese on top once cooked served with salad and maybe garlic bread? want to make me and dh a delicious romantic meal will the duck edd in the mushroom work?

I might be tempted to mix the cheese with some bread crumbs to make a topping for the baked mushrooms, and then make lucious scrambled eggs with the ducks eggs to serve along side....

But that's just cos I always struggle with the timings on my duck eggs and would worry about it all turning into a bit of a congealed mess - at least I'd have the baked mushrooms to fall back on.

I'm not sure, I think the texture of the mushrooms would go a bit funny. I think i'd make a mushroom and blue cheese rissoto and then make creme -brulee out of the eggs for pudding
