How do you cook plantain?

We do a lot of our shopping in an international grocery store. They have a fantastic range of fruit and veg which is much cheaper and fresher than most of the main supermarkets.
Every time we go the kids, especially DS, is fascinated by the giant green and yellow plantains. We would like to try them but I havn't got a clue how best to prepare them. Any recipes much appreciated.

Thanks, do you leave the skin on or remove it? Do they taste banana-re or have they got a flavour of their own?

You don't need to peel them to cook them, but don't eat the skin. Just slice thickly on the diagonal and fry.

V good with jerk chicken.

it shouldn't taste like banana unless it's unripe. It has it's own gorgeous flavour, we have it with eggs every sunday morning for breakfast.

You can boil them also but I think this tastes

I tend to squish them between 2 wooden boards after slicing to get thin crispy slices on frying
