So, what can I do with three cooked chickens just purchased at the bargain price of £1.50 each from sainsbury's hot food counter?

Apart from just eat them of course!

DC's have just had a breast between them for tea. I will do stir fry with another breast and the scraps for me and DH. I can do pasta bake in the morning for saturday lunch and then I'm stumped.

Unless I just do 4 pasta bakes and freeze them? Not very interesting though!!

You could shred the chicken up, add it to some stock and throw in all those odd things that are rattling around in the bottom of the fridge - celery, pepper, mushrooms, onion, handful of dried pasta...etc. Lovely chicken soup. I usually cook it on a Sunday night to get rid of the day's leftovers and it goes down very well. My family fondly call it 'tasty water'!

I can recommend chicken savoyarde - recipe here. Tastes lush and it can be frozen as well which makes it a double winner in my house. You'll need to fiddle with the recipe a wee bit - it starts with poaching the chicken with various aromatics & you won't need that bit. I freeze it before the "sprinkle with breadcrumbs & parmesan" bit. Once defrosted, I do the sprinkle & bake as directed.

chicken soup - chop it all up chuck in with veg and stock.
Chicken risotto. works well with scraps of chicken - peeled courgettes too or mushrooms. Yum.

Just pick off all the emat and freeze it.

Then when you want to make a chicken pie or pasta bake or whatever it's already in the freezer ready to be used.
