Help me meal plan for next 4 days with what I have

Can't go shopping again. I spend way too much for a weekly shop and even then I end up buying more throughout the week, as I never meal plan/ lack inspiration. I'm quite broke at the moment and need to spend much less.

So, no shopping til Monday.

8 meals, 2 of which is just for me and DD(15m), the rest for me, DD, DS and DP (not counting breakfasts, as have poridge, cereal etc)

I have in the fridge:
1 medium chicken
2 veal burgers
6 rashers of bacon
6 sausages
12 eggs
edam cheese, brie, grated cheese
creme fraiche
yoghurts, milk, butter etc

In the freezer:

chips
1bag of small mixed veg

In the larder:

Pasta and 2 jars pasta sauces
Rice
Couscous
Lentils, chickpeas
Sardines
Flour, sugar etc
Canned pineapple
Have sauces ie soya, fish, oyster, teriyaki etc

Not much veg: 2 peppers, broccoli, few potatoes, onions, garlic (so I guess I'll have to get more-or not?), bananas, apples, strawberries

Is it possible to make 8 meals out of it?

Have you got enough veg/potatoes for a roast dinner?
Then toad in the hole (lots of toad) with frozen veg
Omelettes with bacon chopped in and chips
Stir fry leftover chicken with peppers etc and rice(maybe as a fried rice meal), maybe sweet and sour using your tine of pineapple
Or chicken curry with chickpeas to pad it out
Pasta with pasta sauce and sardines?
Couscous with veg and chopped up veal burgers for you and little DD
Pizza made using pasta suace and whatver sort of bread you have and anything else leftover fro toppings
Welsh rarebit
Have you got tinned tomatoes? Make soup with thes and stock and any veg plus pasta or lentils

Running out of ideas, but I think you could do this

Some suggestions:

  1. Roast the chicken and make sure you strip off every last piece of flesh. You could then make this stretch to:
  • creamy chicken pasta (with half of your creme fraiche, half an onion, some garlic and half the broccoli chopped into smallish pieces;
  • teriyaki chicken, onion and red peppers with couscous, as well as more onion and garlic
  • chicken soup by making stock with the carcass + plus an onion and bouquet garni/any dried herbs you have in the cupboard, to which you add some rice and lentils when you're making it into the meal.
  1. Have no idea how big your veal burgers are but I'd suggest chopping them up, maybe adding some oatmeal (you said you had porage), chickpeas and soy sauce or something and serving with couscous/rice.
  1. Again, not sure how many sardines you have but you can serve them with pasta/rice/ and choose your veg accompaniment.
  1. Big veggie stir-fry with rice.
  1. Pasta all carbonara.
  1. Home-made quiche with a couple of whatever you have left as filling (eg broccoli and cheese).
  1. Make a sausage and potato pie using half the sausages, along with onions in the mix.
  1. Use rest of the sausages to make some kind of casserole with onions, garlic, lentils/chickpeas. This would be much improved if you had some tinned tomatoes, which you might just not have mentioned.

Puddings can be a combination of fruit salad/fruit and yogurt mixes. I'm sure you could make the stuff you have stretch if you're prepared to be ruthless about not using all you have of each ingredient the first time you use it. And if you want to save money, don't buy pasta sauces and ready-made stuff like veal burgers ..... Very good luck.

Thanks, jkkplu. I usually cook from scratch, but always have some ready-made stuff in case we come back late from the park etc and don't have time to cook proper meal. I'm not very well organised.

I have in the fridge:

meal one.
1 medium chicken
roasted peppers
broccoli
potatoes - mashed or roasted.
bananas - make banana pudding (met butter, add sliced bananas and cook for 2 minutes, add orange juice - though fine wihtout - and cook for 1 minute, toss with cinnamon.

meal two
2 veal burgers
chips
1bag of small mixed veg
yogurts

meal three
6 rashers of bacon
eggs

meal 4
6 sausages - make toad in the hole.
