Title says it really. I'm making spare ribs with a marinade for dinner and I'd love to have a go at something other than boiled rice to accompany them.

I've made fried rice before but it never seems quite right. Any tried and true suggestions please.

Traditionally fried rice is made with leftover rice. With this in mind make sure the rice isnt wet or overcooked. And if you make the rice a little in advance that should be OK.

Make sure you frying pan/wok is v hot. Add the oil and then the egg (wisked before you put in.

Mix the egg up and make sure its cooked then add the rice and give it a good stir.
When its all nicely mixed up add your soya sauce and give another good stir. I then leave it for a bit to cook (maybe 4-5 mins), stirring occassionally.

So you don't add any spices eg 5 spice powder? Just rice egg and soy sauce?

Just rice, egg and soya sauce. Light soya sauce, not dark.

If we are just having rice, we would add bacon (chopped up and added before the egg) and peas and sweetcorn (after soya sauce).
