Can you freeze a fruit cake?

It's a "teabread" with a very low fat content. I'm catering for 70 and it must be perfect.

Always freeze mine (they are fat-free - a Delia recipe).

They defrost fast with the high sugar content.

Yes

I freeze my Hairy Bikers fat free tealoaf stuff all the time. But it also lasts for DAYS in a tin.

Why freeze it? Teabreads have so much fruit and sugar they normally age very well.

I would freeze it IIWY - it certainly won't do it any harm.
