Chorizo help needed please.

I've bought some for ds, I don't eat meat & don't have a clue what to do with it. I've sliced it up & was going to chuck it in with his pasta & pesto. Do you take the papery skin stuff off it or is it like sausage skin.

DP takes the skin off and dry fries it, then chucks it in with his pasta.
It smells gorgeous, but I'm veggie too.
