Soggy pastry.

Hi, I made a pie with Be-ro shortcrust pastry, filled it and cooked it. But the pastry on the bottom of the pie is still raw, what can I do? Can I cook it on a really low heat for ages or something? Or bin it? Should I have cooked the pastry before filling it?

Hot heat for ten mins then reduce to lower heat till the filling is cooked - or blind bake.

I struggle if I use crockery flan dishes - so I only use metal.

Thanks, but I have already cooked the whole thing. If I put it in the oven again how do I avoid overcooking the filling?

Try putting the pie on the very bottom of the oven. And next time, bake it blind in a metal or enamelled tin.
