I am off on a Caravan trip to France with DD who is 10mths. Any easy meal ideas greatly appreciated so far its sandwichs at lunch (egg mayo, dairylea, ham, etc) and in the evening jacket pot and cheese, scrambled egg, macaroni cheese, speg bol and omlette and a few ella's kitchen meals for emergencies. Any other easy meals that would ideally serve me and DH with ingredients that can easily be obtained greatly appreciated. Ta

Oh, I have never made risotto I will look online for a recipe to see if it easy enough for me. Also got some sauces today as I think we may BBQ some evenings so we can cook an extra breast of chick then let it cool and use for dinner next day.
Any more ideas greatly appreciated

I'm sure that having samey meals just for on holiday will be fine, they look pretty nutritious anyway!
Some other ideas might be:
Egg fried rice, pasta with sauce and cheese, stir fries of any veggies going, eggy bread, beef mince and boiled potatoes/veg, soups of all types, canned chickpeas, butterbeans and lentils ect in pasta sauce/pesto...

also those cans or pots of fruit in juice are nice with custard or yoghurt for pud!

Butternut squash risotto a fav of my kids (and me)and is really easy.

6 tablespoons of olive oil
1 onion
1 butternut

Heat oil and soften onion and squash but dont colour the onion. (about 15 mins)

Add
pinch of nutmeg
pinch of sage
About 200 grammes risotto rice

Mix up together

Add
About a 1.5 pints of boiling chicken stock

Keep mixing and cook for about another 15 minutes.

Mix through a bit of parmesen just b4 serving.

Babies and toddlers love it.
