Left over chicken - what can I do?

had roast chicken tonight with loads of meat leftover.

What can I do tomorrow with it for a meal?

My fave left over roast chicken meal is cold chicken, jacket potato and coleslaw. Not particularly exciting, but damn good!

Quickly stir fry some spring onions and cherry toms with curry paste, stir in pre-cooked rice. Add shredded chicken. If you are feeling posh make a cucumber raita to drizzle it with and sprinkle with coriander.

Everything is better sprinkled with coriander

Soften a finely chopped onion in olive oil/butter with crushed garlic clove, add sliced mushrooms, and bacon if you like.
Cook off bacon and mushrooms,
tip in pot of creme fraiche and rind of a lemon, some lemon juice to taste, salt pepper and fresh thyme if you have it,
stir in the chopped chicken and heat through.
very good with pasta or baked spuds.

Also a very big fan of coronation chicken!

I always seem to go for either a chicken risotto or green thai curry with our roast leftovers.

Chicken and ham (cubed thick sliced cooked ham off the deli) pasta bake - white sauce, pasta, maybe some cheesy breadcrumbs on the top, maybe some broc or tomatoes in the mix too.

Or a chicken puff - chopped cooked chicken in a some white sauce in a piece of puff pastry. Maybe with some cooked broc added to it inside.

[BTW I do always have loads of pots of white sauce in my freezer so that tends to colour my leftover plans ]

Pasta bake:
cook pasta and mix it with the chicken meat and some veggies in an oven proof dish and season. mix 1 or 2 eggs with single cream and pour over. bake for 30 min in a modreate oven. add cheese on top and bake in a hot oven until cheese starts to brown.

Chicken, tinned toms, butter beans, black olives, basil, half a pint chicken stock, chuck in an oven proof dish for half an hour or so and serve with rice and salad....delish! My 3 year old could live on it

We always have savoury rice, you can use all the bits up in the fridge. Cook rice in chicken stock, fry onions, peppers, bacon, mushrooms etc. lob in the chicken with peas and sweetcorn.... Yummy. My 11 year old makes it.

Chicken and sweetcorn potato cakes! Yum (smile)

Just make a batter mix, blanch grated potato and onion for a couple minutes, drain & squeeze it out.
Stir the chicken, potato, onion, sweetcorn and seasoning into the batter.

Heat butter and oil in a pan, spoon mixture in, flatten and cook for a few mins each side.
