What can I do with seafood risotto ingredients?

Fish soup, arborio rice, gruyere cheese, frozen fruits de mer. Apparently the Delia recipe has not been universally successful. See also other thread.

So, how can I best transform these into, ideally, a couple of meals for 2 adults and a toddler? ()

I think it was the fish soup that caused most of the problems, so perhaps make the risotto as per the recipe but use veg stock instead of fish soup. I don't know what to recommend about the fish soup as I can't stand it.
