Can I make this raspberry mousse in advance?

It's a simple recipe - make fresh raspberry puree, whip cream, add sugar to cream, fold puree into cream and put in glasses.

If I am aiming to serve this at about 9pm, can I make it in the morning or afternoon of the same day and just leave it in the fridge until serving?

The fruit won't make the cream separate or anything silly like that, will it?

I don't think so. I'd make it in the afternoon thou then in the morning, and out cling film over the top if you can.

will be fine. even if you make it in the morning.dont under whip the cream though, or it will drop and go all runny. and dont over whip it cos it will go all grainy when you fold your puree through.
