Vegan meal ideas

We'll be hosting a vegan couple for a few days soon and I don't know what to feed them.

I eat meat free meals reguarly but they're vegetarian not vegan.

Any ideas for breakfast,lunch and dinner would be much appreciated.

Few days ago i had a thread with spinach recipes and many posts with fab ideas.
One of them was a vegetarian tart. I've tried it and it was yummy, very good for veggie guests.

I'm sorry i am new and don't know how to link it but try to search 'spinach recipes' or my name?

vegetable and chickpea curry with rice

moroccan vegetable tagine with couscous

vegan chilli with kidney beans and quorn mince served with rice or garlic bread

jacket potatoes with a nice big salad containing pumpkin seeds and cashew nuts

for breakfast surely it's just normal stuff, cereal and toast, with vegan milk alternatives and spreads and cereals that don't contain any milk products? porridge?

vegetable pastry pies for luinch?

Cous cous and tagine is a brilliant idea - add some chickpeas for protein.

Couple of curries, maybe a chickpea one plus a cauliflower and potato one, or a chickpea one and a mushroom one - with rice, salad, chutneys etc.

Big fat flat mushrooms stuffed with garlic and herbs and a drop of olive oil, roasted.

Quorn mince is brilliant - can make spag bol with it, and its chilli with beans is especially good.

Maybe roast veg with toasted pine nuts or sunflower seeds for protein, served with baked sweet potatoes.

Chickpea and spinach or sweet potato and lentil curry or thai curry with coconut milk and baby corns.

My DP once made baked butternut squash with quinoa, fresh chilli and red rice filling. It used every pan in the house and took him about four hours but it was delicious.

doesn't quorn contain eggs?Y ou can make a good bol type sauce with green lentils and finely chopped carrot and tom puree (from Rose Elliot if you have it).

Yeah, I think the quorn 'chicken style' pieces used to contain egg.

How about a thai red curry? Just check that the paste doesn't have fish sauce in it!

You could do a nice fruit compote for breakfast. Soup, homous, olives, salad, for lunch?

Oh and bourbon biscuits used to be totally vegan too!

Quorn has egg albumen in it.
Use Vegemince instead - now in 'Linda McCartney' range or Tescos do one.
Check for 'lactic acid' in ingredients as this is not vegan and pops up in lots of things like pasta sauces and olives...

Part baked rolls with jam for breakfast, or tomatoes and mushrooms on toast.

yep quorn is not vegan.

breakfast - porridge with soy milk - yum
lunch - scrambled tofu (with onions, leeks, mushrooms etc)
dinner - pizza with melting cheezly mozzarella style. borrow isa chandra moscowitz's book "Vegan cupcakes rule the world" - her cakes are to die for!!!
