Can I reheat seafood risotto?

I just bought all the ingredients for this, see here however there are 2 of us + toddler, not 4.

If we have leftovers, can we reheat for the next day (I am inclined to be very careful with seafod) or should I make it up in 2 separate batches?

If I were you I would make half today and half tomorrow. As you say, seafood can be dodgy, plus risotto is always grim reheated.

i love a reheated risotto
not sure about seafood htough.
why not add htat in the next day. jsut keep the rice in fridge

In this recipe the rice is cooked in fish soup and wine (Delia uses a large jar of Soupe de Poissons). So even if I just cook enough rice for 4, it will still be very fishy and I am not sure whether it will like being reheated.

It does sound a good recipe, and temptingly the main ingredients are 1/3 off - and they will last in the storecupboard and freezer - so maybe I will simply wait to cook this till we have an excuse to invite some friends round for a summer lunch and experiment.

I've just cooked this and it was awful. Even I couldn't manage it and I love seafood and risotto.

The children have gone to bed on a ham sandwich instead! They said it was the worst thing ever!

There are quite a few complaints about it on the Waitrose website.

ahem I still have all the ingredients waiting to be used. I wonder whether a revised recipe will be published?
