Nice white sauce for Chick & Ham pie

Can anyone tell me how to make a nice white sauce for Chicken and Ham pie?
I know you can use Chicken/Mushroom soup but it's expensive to get here and hard to find!
Any ideas on doing one from scratch?

Thanks

I do mine by making a roux (about half oz. flour and the same of butter) adding about 3 quarters of a pint of milk slowly while consantly stirring.

Once all the milk is added and it has thickened just chuck a bit of tarragon in. Or white wine. Or both

If you add wine you may want to simmer it for a few minute to burn the alchohol off.

Season and you are good to go.

This is the one I use for a chicken, ham and egg pie, which DH and the kids love. Needs no jiggery-pokery with soup, just a plain white sauce.

425ml milk
50g butter/marg
4 tbsp plain flour
salt and pepper

Melt the butter, sieve in flour and stir to a paste. Cook for 30 second or so, then gradually add milk stirring all while so you don't get lumps. Once all milk added, bring to the boil for a minute (still stirring). Season and add any herbs you want, then mix with your pie filling.

You can use same white sauce as basis for macaroni etc, just add enough cheese to taste.
