How do you make your potato salad?

Please can you all post how you make your potato salad? Never made on before from scratch but will be making one tomorrow so I'm looking for ideas.

New potatoes, boiled in their skins (cut into walnut sized pieces).

When cooked, drain and then dress with extra virgin olive oil, black pepper, flakes of sea salt and the juice of a lemon.

They absorb the flavour of the dressing if you do it when they are hot.

Also sometimes add a spoonful or two of natural yoghurt and/or some finely chopped chives or coriander.

I boil new potatoes, cut in half or smaller depending on their size. I use salad cream, spring onions and black pepper to mix the potatoes in to.

The Simon Hopkinson one which is v delicious involves a mustardy vinaigrette (sp?) then mayonnaise. v delicious. I also quite like the kind which is just potatoes chopped up with mayo, finely chopped gherkin and finely chopped red or spring onion then hard-boiled eggs chopped on top. My mum's tip is to salt the potatoes when hot and newly-peeled.

Also can mix the mayo with greek yoghurt for a less fatty potato salad...

My grandad's Czech potato salad:

boiled new potatoes halved if big
boiled egg, chopped
smoked sausage (matteson's will do), chopped
raw onion, chopped small
cooked carrot, chopped small
gherkins, chopped small
salad cream (NOT mayo or my dad will have words)

this tastes even better the next day as all the flavours mingle.

mix them all together when the potatoes are straight from the pot then cover with lots of parsley, salt and pepper.

New Potato and Chive Salad.

Serves 4-6.

The secret is to add the dressing while the potatoes are still hot so that they absorb all the flavours.

675g/1 1/2lb new potatoes.
45ml/3 tbsp olive oil.
15ml/1 tbsp white wine vinegar.
4ml/ 3/4 tsp Dijon mustard.
4 spring onions, finely chopped.
175ml/6 fl oz/ 3/4 cup good quality mayonnaise.
45ml/3 tbsp snipped fresh chives.
salt and ground black pepper. (I didn't use salt and it was still delicious.)

1. Cook the potatoes, unpeeled, in boiling salted water until tender. Meanwhile, whisk together the oil, vinegar and mustard.

2. Drain the potatoes well then immediately toss lightly with the vinegar mixture and spring onions and leave to cool. Stir in the mayonnaise and chives, season to taste and chill.

As simple as that .

fab - that sounds like a perfect and simple plan, except for the mustard which I think I'll leave out!

Oooh... was going to post my Russian potato salad, but ComeOn Jemima's granddad's is basicalyl the same. Really recommend, SO good.

I peel the potatoes and chop them. Chuck them in the pot to boil. Boil for about 15 minutes then drain. I then mix chopped chives with mayo and dress the potatoes in it.
