We are having soup and pudding. Commited to the soup now and discovered that my sainsbos syrup pudding that I froze can't be cooked from frozen. So stuck.
I have:
1 tin mango
Eggs
Flour
sugar
Creme fraiche

However:
No milk
No butter

Have other things obviously but can't come up with a recipe on my own.

I would suggest a fatless sponge roulade with mango and creme fraiche filling -

See below but do it in a swiss roll tin or as a sandwich cake as recipe suggests.

4 ounce Plain flour sifted
4 ounce Castor Sugar
4 eggs Separated
0.5 teaspoon Baking powder

Sift the flower, baking powder and set aside

separate the eggs put the white of the egg into the clean bowl whisk the egg whites adding the caster sugar a little at a time until the mixture is stiff

Beat the egg yolks with a fork and add to the egg whites beat for a few seconds

fold in the flour carefully

divide the mixture between two sandwich tins or put into a 8' round cake tin bake in the oven for 20 to 25 minutes

Oven temp 350?f (180? c ) gass mk 4

Delicious!
I mushed the mango and filled the roll with it keeping the creme fraiche on the side so as not to make it too soggy and because DD1 doesn't like it.
Half left for tomorrow.
Thank you.
