Jerusalem artichokes ?

Hello,

I have what I think are Jerusalem artichokes in my veg box, what would you use them in?

I have never even tasted them so I really dont know where to start

They make delicious soup. Haven't done anything more adventurous with them than that.

Delish in a dauphinoise too, sliced vv thinly with waxy potatoes and baked with cream and garlic

Chop into smallish chunks and roast in the oven with olive oil. they take a while (45 mins or so) but they end up all caramelised and lovely.

Oh yes and I think you can slice them thinly and eat raw in salad.

They are delicious but quite 'windy' so be warned.
Carrot and j. artichoke soup.
Also bake them in skins like potatoes.

Grate them into a coleslaw.

Roast them with the potatoes.

Make soup out of them

Be prepared for a week of windy bottoms afterwards.

Jamie does a nice warm salad with streaky bacon and Jerusalem artichokes in one of his Naked Chef books (I'm afraid I can't remember which one). It's similar to but not quite the same as this one

You could also just boil them whole and then peel them just before eating. I love them and prefer eating them boiled in their skins

They were very nice, I roasted them in the oven with their skins like large chunky chips with olive oil and some thyme!!
Downside was DH trumpy bum - he was like a world war 2 bomber all night long !!
