Cakes or muffins with parsnips?

Anyone know of any cake/muffin recipes that use parsnips?
Have got a fridgeful of parsnips (DH did shopping ) and neither me or the kids are wild about roasted parsnips.....
Made some lovely carrot muffins earlier this week and I think I have made a cake with courgettes before so do you think I could simply substitute grated parsnip in any of those recipes or would it ming?

There was someone on People's Cookbook who made Honey and Parsnip Scones, will go see if I can find it, not sure if it won and got in the book!

General consensus seems to be that parsnips are fine in baking
Thanks for the recipes - I like the look of the courgette cupcakes and the beetroot choc cake in that article too, might have to try those.

I don't know, I did parsnip cake once and it was nasty. Mind you I just bunged it into a carrot cake recipe rather than following a proper one iyswim. Parsnip soup is nice!
