I have lots in my garden ready to be picked. what can i do with it? any nice crumble recipes? anything else? come inspire me!!

Ninja, I made a gorgeous rhubarb crumble at the weekend, though I say so myself.

I don't have the exact recipe to hand but what I did do was add the zest of an orange and a squeeze of the orange juice, as recommended by Nigella. I also used 3/4 flour and 1/4 porridge oats for the dry ingredients, although you rub the butter in to the flour first and stir the oats in afterwards.

And I didn't pre-cook the rhubarb at all. It came out fine, tender but not mushy.

I've done a strawberry and rhubarb crumble before and last week I did the Delia recipe from Waitrose which was a rhubarb creme brulee. It was delicious.

Rhubarb and strawberries go really well together in jam too, if you are a jam maker.

Poach in a little water till cooked and then mix with vanilla extract (the proper stuff - about 1 teaspoon) and some Total full fat yoghurt. Lovely!

Made Rhubarb Fool at w/e - v simple and even DC, who claim not to like rhubarb ate it though I didn't tell them what it was!

Rhubarb and ginger jam or Nigella does a fantastic Brown Sauce using rhubarb.

Brulee sounds yummy too, always on the look out for good rhubarb recipes

cor these all sound rather lovely. would love to make the brulee but don't have any ramekins i think. i have found this which looks delish and think i'll try it tomorrow.

I didn't do it in ramekins just in a large dish. Will have a look on the waitrose website or will post recipe later.

Delia's ginger and rhubarb brulee is on the waitrose website plus tons of other recipes.

Didn't realise you could do so many things with rhubarb.

try rhubarb crumble with chopped stem ginger and a little extra ground ginger.

second the oats in crumble topping, and add a bit of ginger too.

you have rhubarb already

Definately ginger with rhubarb

Made a yummy apple and rhubarb crumble last week, was delish. I also use oats in the crumble mix, makes it more crunchy.
