Brown or a mix of white basmati and wild rice. I would imagine you would need a certain amount of texture and "bite" to go with mushrooms.

personally I'd go for the american long grain and wild rice mix they sell in sainsbury's ... its fabulous

do you cook the cashew nuts, or just throw them in at the end?

dry roast them in a fryign pan, and then throw them over the top.

also works with walnuts, but i prefer cashews.
