My four-year-old is a real fuss-pot when it comes to carbohydrates. For a long time she has shunned rice, pasta, noodles, couscous, and any form of potato except for mash. She's a nightmare.

I have recently got her back onto rice when it's accompanying my home-made chicken curry. So what other kinds of rice-based meals can I make? She quite likes meat, of various kinds, so basically, can anyone suggest meat-based sauces that you can do with rice?

(Apart from chilli con carne. That's been nixed already.)

Thanks for any suggestions.

My dd's really like chickpeas with rice,we cook them with onion and tomato and garlic, sometimes with some very mild spice, sometimes not. They really love them. Also stir fried vegetables with tofu,or chicken if you eat it.They also often have grilled salmon with rice and greens, broccoli etc.

Sausage rissoto - One of my failsafe meals

Cook sausages

Cook Rice.

In a pan, cook onion, bacon, mushrooms and whatever needs using up in the fridge.

Add tinned tomatoes.

Mix in cooked (chopped) sausages and rice.

Serve.

I often make a prawn/seafood and rice dish.

Fry onions and whatever spices you might like to add.
Add rice, cook for a minute or so.
Add enough stock to cover rice by about the same depth as the rice.
Add prawns/other seafood 10 minutes before the rice is ready.
Takes about 20 minutes in total and the rice absorbs all the lovely flavours.
My boys always clean their plates when I make this.

You can substitute the prawns/seafood with mushrooms/chicken or whatever. But fry the mushrooms/chicken with the onions before adding the rice.
