An easy bake/non-bake Mascarpone cheesecake?

Anyone have any good recipes?

Lime cheesecake

200gms crushed
50gms melted butter
1 tub mascapone cheese
2 limes, zest & juice
1 tbspn icing sugar

Make biscuit base.
Mix mascapone cheese with lime juice. zest & icing sugar.
Cover biscuit base with cheese/lime mixture.
Chill.

Much of the recipes I've found have required vanilla essence - which I cannot find in SWitzerland.

This recipe seems simple enough - will have a go with my son this afternoon!

Would you know of any baked recipes? For when ingredients and time permits.

130g crushed biscuits
50g of butter
Mix the two and line tin, reserve in fridge

For the topping, mix 500g plain fromage frais with 125g caster sugar, beat in an egg, a little ginger powder and a squirt of lemon juice.

Pour topping over biscuit base and cook at Mark 4 for about 45 mins.
