Since trying the delicious shepherdess pie recipe on here I have discovered pearl barley. I can't get enough of it. Can anyone recommend some recipes.

Simon Rimmer's veggie hotpots use pearl barley and are nice.

Barley and vege soup is yummy and dead easy.

This is the recipe for shepherdess piehere. (Really hope that works!)

I have substituted the cayenne for chili powder due to my limited store cupboard stocks but it works a treat. I cook it as a pie or if i'm pushed for time I will not bother with the potato. It also tastes delicious cold.

Janeite, how do make your barley and veg soup? I have never tried barley so I would like to give it a go. Since having DS2 I have totally gone off meat so all these new ingredients are new to me!

I pour boiling water over pearl barley and zap in the microwave for ten minutes.

Meanwhile I fry off some carrots, leeks, onion, potatoes, garlic and celery with some olive oil, some fresh thyme, pepper and a few chilli flakes.

Pour the barley and its water into the veggies and add some stock (I use Marigold) then bung the casserole dish into the oven for about an hour.

Thanks janeite. I will give it a try. Sounds lovely. Of course I have tried barley - that's what my post is about! Thought it might have been a vegetable I haven't tried ! Like I said all these new ingredients are new to me and it's been such a long day.

I do a soup at the moment with an onion, maybe a leek,a carrot or two some turnip and about 1/2 a celariac (diceed obv). Sweat those, then add ~4 oz each pearl barley and red lentils, and veg stock (ok, marigold powder or kallo cube). simmer till done.
