is dh's fave - i am queen of small yorkshire puds so how do i do t in the hole? Do i need to cook the sausages first? Im thinkig big roasting tray , grease it up , larry in pudding mix and raw sausages and bit of onion and thats it - it is isnt it?? I need to grease up to him

I do the sausages in a small amount of oil first - gets the oil good and hot. Then wallop in the pudding mixture, as fast as you can so the oil doesn't go cold. I'd do the onions in your gravy rather than in the toad.

good plan about whacking sausages in the watsit first - i cant do onion gravy so whack em in with the sausages because i use ahhhhhhhh bisto . I was considerign popping some chopped apple in as well but that might be a step to far.......

i part cook my sausages in the oven for about 15mins to start with
put a good dollop of beef dripping in the serving dish and put this into a hot oven about 210oc for approx 15 mins as the fat needs to be roasting hot or the yorkie batter won't rise
add the sausages and batter and cook for a further 20mins @ same temp
onion gravy is straightforward really,slow cook your sliced onions in a good knob of butter adding some sugar to caramelise them,when nice and soft sprinkle with a good spoonful of plain flour and give it a good stir to soak up all the juices,slowly add hot stock stirring all the time or it'll be lumpy
bring up to the boil,then reduce to a slow simmer until it's nicely thickened

Thanks just seen this later now, i did put in the onion and apple and it was devine and certainly softened the blow of telling dh i had a speeding fine . Part cooked sausages and onions and apple before adding the batter - lush.
