pinapple upside down cake recipe?

A friend made one recently when we went over, she put tinned pineapple and a few tablespoons of golden syrup in the bottom of a pyrex bowl, then added a normal vanilla sponge mixture (2 eggs I think) with a little bit of golden syrup stirred in. Easy peasy!

Mix equal quantities of butter and brown sugar (as much or as little as you like), and spread on the bottom of a cake tin or flat-bottomed pyrex. Plain butter on the sides of the dish. Line base of dish with tinned pineapple rings, Half a candied cherry (cut side up) in the centre of each pineapple ring. Then pour over standard plain sponge mix and bake as normal. Probably slightly longer than normal if it's in a pyrex.

Turn out.

Pour custard.

Enjoy..........

Here is mine. It's not Nigella standard I'm afraid

Shove pineapple in bowl - I prefer tinned but if I have fresh to use up, that will do too. Sprinkle some sugar over and, if using fresh, a little water.

Then put 'normal' sponge cake mixture, I tend to do 4oz sugar 4oz fat 6oz SR flour 2 eggs and a bit of vanilla essence - then bake for 30 mins or so until skewer comes out clean. Tip out and upside down if you wish or just serve as is. I make this same recipe in the winter with apple and blackberry.

(Sorry don't know grams - my mum always taught me to remember 4462!)

We have vanilla ice cream in our house - funny was lusting after Pineapple Pudding just last night!

As WhoamI...but I use brown sugar....so much more syruppy.
