Would love some inspiration for some great salads and dressings please.

Grilled halloumi with beetroot and watercress (yes really). Sweet chilli dressing really finishes it off.

Smoked mackerel with mango and rocket.

Those are definitely my favourites, but I'm really into the whole something salty, something sweet, something with some heat.

beetroot feta and mint
brown rice, tuna, lemon, spring onion, celery & parsley
good old mozzarella tomato and basil - pretty much unbeatable
grated carrot with raisins, pumpkin seeds, olive oil and garlic
old fashioned cucumber salad where you let it stand with vinegar and sugar overnight - divine with poached salmon
puy lentils with red onion, herbs, sundried tomatos, and feta

Not a salad as such but lovely accompaniment for a bbq. Boiled new potatoes, crushed and bashed about a bit when they're cooked, with wholegrain mustard, honey and olive oil dressing stirred in while the potatoes are still warm.

I always take a huge bowl when we go to a bbq and they always go really quickly!

new potatoes, avocado and cress. Sprinkled with toasted almonds and a lemon and olive oil dresssing

I would use a sweet honey vinagrette- balsamic vinegar, olive oil, honey and lemon juice.

mango , prawn and cherry tomato

little gem lettuce, capers & plum tomatoes with white wine vinegar and splash of olive oil

couscous made with veg stock, mixed with feta and black olives

baby potatoes, with mayo, rock salt, garlic and paprika

and for cheating, M&S soybean and edemame beans with chilli dressing

I like smoked mackerel with watercress and pink grapefruit

I also love spring for the herbs, if you can, grow your own so you can pick them really young. I esp love tarragon and dill added to green salads, together with sunflower and pumpkin seeds.
