need a receipe for a salad dressing.....

We are going on a picnic tomorrow and I have only just realised that one of out friends doesn't like mayo, which is an integral part of my chicken and pineapple salad. As I have all the ingredients I was wondering if anyone could suggest a dressing recipe that would go nicely with these ingredients:

chicken
pineapple
capers
celery
spring onion.

I would do my usual balsamic dressing but it might be weird with all those other things. Suggestions anyone.

That seems a teeny bit odd if you don't mind me saying. I'd put something like potato in instead of chicken, if you were using those ingredients.

I'd do a dressing of olive oil, lemon, garlic and mustard. My standard. Proprtion of oil to lemon would be about 4:1.

Oh if you love salads you should try it. It is gorgeous. It is best with a bit of mayo, black pepper and a tiny bit of mustard.

I will try your dressing.

Its the capers that throws the curve ball for me. If your capers come in a vinegary brine, maybe you could mix that up with a little ex vir olive oil, salt, pepper , crushed garlic and a herb.

Not sure how it would go with capers, but tarragon IME would go very well with the rest of it.

The original recipe calls for 1/2 mayo and 1/2 creme fraiche black pepper. I was thinking the next best thing would just be ex vir olive oil on its own (I think it would be quite weird with extra acidity). If you try it let me know what you think.

Anyway, I didn't do it in the end - too cold for a picnic. We went out for lunch instead.
