I love those 101 books, have quite a few of them

I do mine as lemon and coriander mainly- I buy the flavoured ones for speed and its nice with chopped boiled egg and spoon of VLF mayo or salad cream plus sweetcorn & cherry toms

Cooked for a meal I saw in one of my 101 books making it fairly simple and then packing it into a parcel and putting a piece of salmon on top and baking it.
My mum does a bean casserole and then layers the couscous on top and leaves it for 20 mins to absorb flavour and thats yum

Fab recipe adapted from mn...

1 tbsp olive oil
1 tbsp lemon juice
Basil
Oregano (to taste, but I use loads)

Mix up, and brush onto chopped courgette, tomatoes (or whole if little), mushrooms (ditto), peppers. Roast in oven for 40 mins or so. Use the rest of mixture to panfry some chicken thighs (could brush on, then grill no prob).
Serve with couscous (or rice) and salad (eg spinach and chard)
Absolutely gorgeous, and can prep most in advance.

Tis best with beetroot and goat's cheese...

...but otherwise, surprisingly good with veggie sausages

Fry in olive oil: garlic (lots), cherry tomatoes, and chopped red pepper. Aubergine and pine nuts good too here.

Stir into cous cous with lots of chopped parsley. Yum.

By the way, the fat in nuts is Good Fat. (As is the fat in seeds, avocados and oily fish, and probably a bunch of other things I can't remember). Your body needs it to be healthy and have shiny hair and good skin and things.
