Please help me with meal planner for 1yo and 3yo

I am trying to cobble together a repertoire of a dozen or so easy teas for the DSes and need inspiration!

Here are the caveats:

  • I am no kind of cook at all so needs to be really easy
  • We are veggie, although I don't mind giving the DC fish fingers etc I wouldn't buy fresh meat as it would go to waste
  • DS1 is allergic to eggs, chick peas and lentils and v fussy, won't eat potatoes, pasta or any kind of pie and prefers food where bits are separate. I am willing to serve up stuff I think he's unlikely to eat once or twice a week, I don't think he'll starve!
  • DS2 refuses to be spoon-fed so needs to be finger-food compatible
  • The two of them are capable of destroying the house while I'm in the kitchen so needs to be minimal cooking time, I can batch cook and freeze ahead of time though

And here are my ideas so far...

  • Fish fingers, mash and peas
  • Cheesy pasta with veg
  • Cauliflower cheese
  • Baked beans on toast
  • Muffin pizzas with sweet potato chips
  • Fish cakes with sweetcorn

Do these sound OK and has anyone got more ideas?

If you don't mind giving fish fingers could you not buy fish and white meat just for the dcs?
There isn't much protein in what you have discribed as good sources are egg, lentils, chick peas and obviously they are a no go.

Soya is a good source of protein.

If time is an issue you can buy pre prepared veg (fresh) that you can microwave in the bag, or frozen(frozen is actually better as is maintains more vitamins).
You can also buy frozen white fish fillets that you can microwave from frozen.

Prawns come readily prepared and are easy to eat as finger food serve with salad and new pots?

Cheese is an excellent form of fat and protein and can be added to most dishes.

Chicken with veg and mash could be cut into strips for finger food. (roast the chicken fillets so they can be put in the oven and left while you attend to the dcs.)

Jacket pots with tuna/beans/cheese with salad.

Home made chicken nuggs, sweet pot chips and beans.( make a batch of nuggs and freeze)

Spag bol.
