I'm having cod, new potatoes and green beans - DP thought I made him a fattening dinner last night (asparagus risotto) so am keeping it super light tonight.

Oh well you could have asparagus risotto then. I didn't personally think it was terribly fattening!

beans on toast

I love risotto, but cant be bothered to make it...

Might have to be beans on toast or jacket potatoe with cheese and beans...

I'm a warmed thick slice of goat's cheese drizzled in honey and toasted on top of some roasted Mediterranean vegetables tossed in pesto on a bed of peppery salad leaves, sprinkled with toasted pine nuts.

Really easy and utterly delicious.

Otherwise you could bung in a baking potato and having it with butter, cheese and baked beans.

get all your veggies and chop them up - leaving rather large slices of onion - infact make em all large pieces. i use leek, courgette, onion, pepper, mushrooms - anything really add garlic.

then cube your chicken - stick in frying pan with olive oil - fry it all up

add spices if you have them - chili is surprisingly nice - extra spesh if you have chili oilive oil. or oregano or herbs of provance.

serve with salad from a bag

I have this cod dish when I want something quick, easy and healthy. I have green beans or baby corn instead of lentils.

nappyaddict · 07/05/2010 18:23

Oops just read that you don't eat fish

anything based on lentils/pulses is going to be filling and low fat , ditto beans

i make my own baked beans which are delish, with honey and lots of tomatoes, slow cooked for hours.. the recipe was on the packet of dried haricot beans! that with some sourdought bread and possibly an egg will fill you up for days !

jacket potatoes with chicken/apple/salad cream is delish or you can have that in a wrap

you can get sin free sausages from lots of butchers which are v low fat. chicken sausages are also low fat. make a casserole with red onion , peppers and a bit of stock
