What can i do with sweet potato??

ok i am trying to get hubby to eat a better diet and getting him to try new things, so this week i ordered sweet potatos and i have never eaten them or even cooked them what can i do??

peel and mash them

slice into wedges and roast them (delish)

You can do whatever you would do with regular potatoes with them.

baked sweet potato is lovely - already sweet so you don't really need butter with it - super healthy

Bake in the oven (takes about an hour), then cut them carefully in half and scoop out the inards. Mix with chopped up grilled bacon, sweetcorn, sliced spring onion and a drizzle of olive oil. Put the mixture back into the skins, sprinkle some cheese on top, then put them back into the oven for 10 mins. Serve with a dollop of creme fraiche. Delicious.

I went out for dinner last night & had monkfish on sweet potato mash - was made with coconut milk & was absolutely divine...probably not the healthiest option but still, yum
I also sometimes chop the sweet potato up into really small cubes and roast with a bit of oil - makes a yummy filling snack to keep me away from the chocolate!

It's really good in veggie curry with spinach and mushrooms.

par boil, then roast with things like red pepper/aubergine/mushrooms - lovely

DP doesn't like sweet potato

I'll be honest with you - I think they're revolvingly sweet. BUT when chopped into chunks and roasted along with other veg they're ok, and they're quite fine when mixed with white tatties and mashed.

Bake them in their skins then eat with creme fraiche and choped red onion, coriander and red chilli.

Good in soup.

Good in curries with coconut milk.

I agree with janeite. I make a sweet potato, coconut and red lentil curry. It always goes down a treat in our house. I sometimes add some chicken if I have some but it tastes great without.

Roast in chunks and make kebabs with halloumi. Serve with salad.

some great ideas thanks, OhFuck thats what im worried about it being sickly sweet but then if i can get hubby to eat it that a bonus lol, hubby would much rather eat pie and chips or steak lol.

so far he has eaten and liked
Roasted Sea Bass fillets, Lental soup, sugar snap peas.

this week will be trying Butternut Squash and Sweet Potato lol

Roast chunks, then mash together with roasted garlic, coriander and goats cheese. Add bit of black pepper and lemon juice.

Grate and make into hash browns. You can mix with white potatoes if too sweet for you.

you can also use the peelings,just fry once you have peeled the potatoes......yum or saute whichever way you prefer
