Left over roast lamb ideas please!

I am cooking my first ever roast leg of lamb tonight (MIL bought it for me to make - not sure why ).

Thing is it will only be me and DP for dinner, so there will be lots and lots left over, as it looks massive.

So what can I do with the leftovers? Any recipe ideas? Was thinking something middle eastern-ish, but how would you reheat the lamb, and would it be OK to eat reheated?

Roast lamb just lovely on its own in sandwiches.
Or to stealsurreptitiously from thre fridge.

I always make far too many roast pots on purpose. Then slice and fry and serve with the cold meat, salad and pickles.

Or cold lamd is delicious simply with mash and veggies.

It is fine to reheat the lamb, After a couple of days if there's any left i cut it off and curry it. Just make sure it's heated through thoroughly. The bulk of it I eat cold though - leg of lamb is so nice by itself it seems a shame to turn it into a stew IYSWIM, even an exotic one.

Agree with Moondog. I can only ever manage sandwiches as it's so lovely and such a treat.

My Mum used to make rissoles with left over lamb. Put the lamb in a food processor so it is very finely chopped, them mix with cooled mashed potatoes, cold mashed carrots (or mashed tinned carrots) and a raw egg. Then make into patties (a bit like fishcakes) and coat in breadcrumbs and shallow fry. They are delicious and you can freeze them before frying.

My favourite is thick slices on fresh bread with lashings of mint sauce!

If there's lots, why not try serving it with cous cous? I would make a nice tasty cous cous, rub the lamb with some middle eastern type spices, and maybe serve with plain yoghurt drizzled over.

Other things that go well with it include hummus, roasted red onion and root veg.

Get some chinese pancakes from the supermarket, shred the lamd and stir fry for a couple of minutes. Put some hoi san sauce / cucumbers / spring onions on said pancakes and eat like crispy duck! Yum!

Kebabs with pitta bread and salad. Healthy!
Couscous with roast vegs with a cool yoghurt sauce and a hot spicy one.

Ooh - lots of replies thank you so much! Didn't get round to doing anything other than eating chunks of it yesterday but there is tonnes left over so will attempt one of your lovely suggestions today!

Shepherd's pie or Lamb curry would be the favourites here.

(we tend to do rissoles with leftover beef, but I am sure lamb ones are nice too)

..is it lunchtime yet - we have loads of leftover roast beef
