Meringues HELP - how essential is vinegar?

Sorry new thread, this is urgent :-)

Don't think have vinegar in the house, and its Easter day so suspect I won't find any shops open!

I have rice wine vinegar? Will that do?!!

Yes will do. Think it only makes them chewy - if you miss it out makes them crispier ....

I never bother with vinegar. It'll be fine without. Just let them cool slowly for the chewiness.

Some recipes have corn flour.

I dont bother with either.

Could put anything in, I sometimes add Baileys or coffee or almond essense ...

I have got cornflour - think will put that in since I have it.

PS trying out brand spanking new Kenwood I got massively reduced at Currys
