What herbs go with trout?

I got a packet of 3 fillets of trout in the reduced section today (70p!!) but having never cooked trout before I don't really know what herbs will suit it?

Dill, but also surprisingly good with cubed pancetta, or bacon. Grill it with the pancetta on it and its really nice. Almonds are another classic combination with trout.

Almonds, yes that's doable, I have some flaked almonds in the cupnoard I think, toasted or as they are do you think?

Tarragon with garlic and butter is good

Also soysauce, ginger, garlic, honey and lime. Let it marinade for an hour before bunging it in the oven

oh and you can put coriander leaves on it as well if you like coriander

Second coriander. Prob just put the almonds on as they are, they will toast as you cook it - if you toast them first they might burn.
Sorry for the dill suggestion...I must admit, I don't like it either!

I would just cook it simply with a little bit of oil under it, a knob of butter on the top and black pepper and lemon juice squeezed on it. Then a slice of lemon to garnish. If anything else is needed maybe a drop or two of soy sauce.

Re almonds, what do you do, just scatter them about on top or crush and make a crust type thing?

Well I toast the almonds first and serve them scattered over, which is nice.

Just speculating now, but I wonder about rosemary, seems it might be lovely.

Sainsburys do a taste the difference Trout with thyme and orange butter - 'tis yum and very easy to make. Just mix some butter,OJ and thyme together, and put a few dollops on the fish. Add a slice of orange and sprig of thyme. Cover with foil and bake for 20 mins or so.
