Eggs and vegetables - ideas please!

Have dozens of eggs and we all need to eat more veg. Any inspired ideas?

Spanish omelette? Frittata?

Tempura vegetables? Or veg in breadcrumbs? Souffle?

I would feel very grown up if I coukd make a souffle! Love eggs in curry and egg fried rice. Scrambled eggs with peas for breakfast!
