Anyone frozen fairy cakes before?

Hi,

I am having a 3rd birthday party for DS next Saturday. I need to do as much pre-preparation as possible before the day but despite usually being a calm (ish) person am already in a panic (breathe breathe).

I am wondering if I can make some fairy cakes (plain and chocolate) in advance and freeze them without the iceing.

If anyone has done this can you give me any tips? In fact, step by step instructions on freezing and defrosting them may just calm me down a bit!! Would I be OK to defrost and ice them on the Friday before the party? Will they taste OK??

Any tips would be gratefully received.....

I make, bake and freeze them all the time!

Iced as well though if you freeze them with sweetise on the sweets come off.

I put mine in freezer bags (6 in a bag) and knot the top and chuck them in. They defrost easily in a few hours.

Yup, I've frozen them and they've been delicious - just wait til they're cool from the oven, freeze them in airtight bags, defrost in a cool room so they don't dry out and then ice them the day before the party, they'll be fine.
